Another popular Traditional Dish from my Beautiful home, St. Kitts and Nevis and the wider Caribbean. This Dish stems back to the days of slavery when our African ancestors had to use their whit and creativity to produce this amazing Cuisine from the scraps and lesser “quality” parts of the Pig, while the Slave Masters, Plantation Owners, families and friends dined on the popular pieces such as Ham, Pork Shoulder etc. The Pigs ears, tail, and feet “Trotters” where left for the slaves to make do, and so they did. With the addition of herbs and spices, along with lime juice and the proper preparation a superb Dish was created out of seemingly nothing. “SOUS”
